Oat & Coconut Energy Balls

Energy balls comes in many shapes (yes, really, they’re not always spherical) sizes and varieties so there is bound to be one that suits you and with a single energy ball costing as much as £3 in fashionable cafes making your own has plenty of advantages, you can both save money and make the ones you really like the most.

Ingredients

  • 20g porridge oats – coarse ground works best.
  • 120g Dates with stones removed
  • 25g Desiccated coconut (plus some extra for coating)
  • 85g Jumbo mixed raisins
  • 1 tablespoon coconut oil

 

Method

  1. Place the raisins and dates in a food processor and pulse briefly until the mixture forms a sticky paste. (Depending on the power of your processor this may only take a few seconds so be careful not to overdo it)
  2. Add the oats, desiccated coconut and coconut oil and pulse again to thoroughly mix.
  3. Divide the mixture in to equal lumps and shape each lump in to a ball by hand
  4. Put the extra desiccated coconut in to a bowl and roll the balls in it to thoroughly coat
  5. Chill in the freezer for a least 60mins to let the mixture harden.
  6. Once hardened remove from the freezer and they’re ready to eat.

Individual balls can be kept in the fridge for ten days or around three weeks in the freezer.

This recipe should yield ten energy balls of around 35g each, but if you prefer bigger or smaller energy balls then you can cut your mixture accordingly.

If you don’t want to make energy balls then you can just as easily make energy bars by dividing the mixture in to ten parts and firmly compacting in to bar shapes before coating and freezing.
